Ingredients

Units Scale

Pasta Chips

  • 6 uncooked lasagna noodles
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons Italian seasoning
  • 1/2 teaspoon garlic powder
  • Oil for deep-fat frying

Dip

  • 1/2 pound bulk Italian sausage
  • 2 cups whole-milk ricotta cheese
  • 1 cup spaghetti sauce
  • 2 garlic cloves, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup shredded Italian cheese blend

Instructions

  1. Prepare the Lasagna Noodles: Cook lasagna noodles according to the package directions. Drain and let them cool slightly. Cut the noodles into 2-inch pieces and prick each piece several times with a fork to prevent puffing during frying.
  2. Mix the Seasoning: In a small bowl, combine the grated Parmesan cheese, Italian seasoning, and garlic powder. Set aside for sprinkling later.
  3. Fry the Noodle Chips: In an electric skillet or deep fryer, heat oil to 375°F (190°C). Fry the noodle pieces in batches for 1-2 minutes or until golden brown, turning once for even cooking. Transfer to paper towels to drain and immediately sprinkle each batch with the prepared cheese mixture.
  4. Cook the Sausage: In a large skillet over medium heat, cook the bulk Italian sausage for 4-6 minutes, breaking it into fine crumbles as it cooks. Continue until the sausage is no longer pink and is fully cooked.
  5. Make the Dip: Add ricotta cheese, spaghetti sauce, minced garlic, dried basil, oregano, salt, and pepper to the cooked sausage in the skillet. Bring the mixture to a gentle boil, then reduce the heat and let it simmer uncovered for about 5 minutes, stirring occasionally, until the dip is slightly thickened.
  6. Melt the Cheese: Transfer the dip to a 1-quart microwave-safe dish. Sprinkle the shredded Italian cheese blend over the top. Cover and microwave on high for 45-60 seconds or until the cheese melts completely.
  7. Serve: Serve the hot lasagna dip immediately with the crispy lasagna noodle chips for dipping.

Notes

  • Fry the noodles in small batches so they cook evenly and stay crisp.
  • You can substitute ground turkey or beef for the Italian sausage if preferred.
  • Store any leftover dip covered in the refrigerator and reheat before serving.
  • For a vegetarian version, omit the sausage or use a plant-based sausage alternative.
