Description

This Shrimp and Mussels Pasta recipe combines succulent seafood with flavorful tomato sauce and pasta for a delightful meal that’s perfect for a special occasion or a cozy night in.


Ingredients

For the Sauce:

  • 2 fl. Oz. Extra virgin olive oil
  • 1 large onion, finely diced
  • 3 cloves of garlic, crushed
  • 2 large tomatoes, grated and skin removed
  • 1 tablespoon sweet paprika
  • 1/2 teaspoon dried chilli flakes
  • 34 tablespoons fresh chopped parsley
  • 2 fl. Oz. dry sherry
  • Salt and pepper for seasoning

For the Pasta:

  • 1 lb (400 grams) spaghetti or tagliatelle pasta
  • Water for cooking the pasta

For the Seafood:

  • 12 large shrimp, shells and head removed, deveined
  • 2.2 lb (1 kg) fresh mussels, cleaned and debearded
  • 1 lemon, zest grated

Instructions

  1. Prepare the sauce: In a large pot, heat half of the olive oil and sauté onion until golden. Add garlic, tomatoes, chili flakes, and paprika. Simmer and set aside.
  2. Prepare the pasta: Boil water, add salt, and cook pasta until al dente.
  3. Cook the shrimp: Sauté shrimp in remaining oil, season, and set aside.
  4. Add mussels, sherry, and seasoning: Combine lemon juice, zest, parsley, sherry, and water. Add mussels, cover, and cook until they open.
  5. Add the cooked pasta and shrimp: Combine pasta, shrimp, and sauce. Adjust seasoning and olive oil.
  6. Serve: Serve in a bowl, garnish with lemon, parsley, olive oil, and cracked pepper.

Notes

  • Storage: Best consumed immediately; store leftovers in an airtight container and reheat thoroughly before serving.
