Bell Pepper Nachos:
- 6 large bell peppers
- 1 pound ground beef or ground turkey
- 2 tablespoons taco seasoning
- 3/4 cup canned black beans, rinsed and drained
- 3/4 cup sweet yellow corn, thawed
- 1 jalapeño, sliced (optional)
- 1/2 to 1 cup reduced-fat shredded Mexican cheese blend
Instructions
- Preheat the oven: Preheat the oven to 375°F. Coat a large baking sheet with nonstick oil or parchment paper.
- Prepare bell peppers: Core and slice the bell peppers into chips. Arrange them on the baking sheet.
- Cook the filling: In a skillet, cook and crumble the ground beef. Add taco seasoning, water, black beans, corn, and jalapeños. Heat through.
- Assemble: Spoon the beef mixture over the bell pepper chips. Top with cheese.
- Bake: Bake until cheese melts, about 10 minutes.
- Serve: Top with your favorite toppings and serve warm.
Notes
- Leftovers can be stored in the fridge for up to 3 days.
- Assembled nachos can also be stored in the fridge, but peppers may soften.
