For the Lobster Pasta:
- 8 oz Tagliolini or other long pasta
- 2 med Lobster tails (6-8 oz of meat)
- Salt to taste
- Pepper to taste
For the Cream Sauce:
- 1/2 cup Heavy cream
- 1 Shallot
- 2 cloves Garlic
- 1/4 cup Dry white wine
- 1/2 cup Cherry tomatoes, sliced lengthwise
- 2 sprigs Tarragon
- 1 teaspoon Lemon zest
- 2 tbsps Butter (or more)
Instructions
- Prepare the Lobster: Break down the lobster tails. If using whole lobster, kill it humanely and remove the meat. If using store-bought lobster tails, carefully extract the meat.
- Prep Ingredients: Mince garlic, shallot, and tarragon. Zest lemon and slice cherry tomatoes.
- Cook Pasta: Boil pasta until al dente, then drain.
- Make the Sauce: Sauté shallots, garlic, and tomatoes. Add wine, lobster meat, tarragon, and cream. Simmer.
- Combine Pasta and Sauce: Toss cooked pasta in the sauce. Season and adjust consistency.
- Garnish and Serve: Finish with lemon zest, chives, red pepper flakes, and optional Parmesan.
