- 100 g Fromager D’affinois Le Fromager (sliced into thick strips)
- 4 tbsp lobster bisque
- Fresh chives (finely cut)
- Squeeze of lemon juice
- 4 slices white sourdough
- 4 tbsp mayonnaise
- 50 g butter
- 1 tbsp olive oil (extra virgin)
Instructions
- Prepare the Lobster and Bisque: Start by cooking the lobster in boiling water until bright red and fully cooked, then remove the lobster meat and set it aside, reserving the shells for the broth. Using the shells, prepare the lobster stock by simmering them with celery, carrots, onion, garlic, thyme, tomato paste, and white wine to create a flavorful bisque base. Strain and reduce the stock to intensify the flavor, then finish it by blending with butter to achieve a rich, creamy consistency.
- Prepare the Lobster Meat: Cut the lobster tail into large chunks and mix it with some of the lobster bisque, fresh chives, and a squeeze of lemon juice to enhance the flavor and add moisture to the filling.
