Shrimp Mixture

  • 1 pound peeled jumbo shrimp
  • 1/2 cup dry white wine
  • 1/2 stick (4 tablespoons) unsalted butter, melted
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Juice of 1 lemon
  • 3 garlic cloves, minced

Topping

  • 1/4 cup finely grated parmesan cheese
  • 2 tablespoons melted butter
  • 1/2 teaspoon salt
  • 3/4 cup panko breadcrumbs
  • 1 tablespoon finely chopped fresh parsley (for serving)

Instructions

  1. Preheat Oven & Prepare Baking Dish: Preheat your oven to 425°F (218°C). Combine the white wine and 2 tablespoons of melted butter in a 13×9-inch baking dish. Spread evenly and place the dish in the oven as it heats up. Leave it in the oven for 10 minutes, allowing the flavors to meld and the dish to get hot.
  2. Mix Shrimp with Seasonings: While the dish is heating, in a medium bowl, stir together the remaining melted butter, lemon juice, minced garlic, ½ teaspoon salt, and ¼ teaspoon black pepper. Add the peeled shrimp to this mixture and toss until evenly coated.
  3. Prepare Crispy Topping: In a separate bowl, mix the panko breadcrumbs with 2 tablespoons melted butter, ½ teaspoon salt, and finely grated parmesan cheese to create a crunchy topping.
  4. Arrange & Top Shrimp: Carefully remove the preheated baking dish from the oven. Spread the shrimp in an even layer in the hot dish. Sprinkle the prepared panko-parmesan mixture evenly over the shrimp.
  5. Bake and Broil: Bake the shrimp for about 12 minutes, or until they are opaque and cooked through. For extra crispiness, switch the oven to broil for the last 1-2 minutes, watching carefully until the topping turns golden brown and crunchy.
  6. Finish & Serve: Remove from the oven, sprinkle fresh chopped parsley over the top, and let rest for 5 minutes before serving. Enjoy warm.
