Marinade:
- 1/2 cup extra virgin olive oil
- 2 tbsp balsamic vinegar
- 2 tbsp champagne or apple cider vinegar
- 2 tsp honey
- 1–2 cloves garlic, grated
- 1/2 cup fresh basil, chopped
- 2 tbsp chopped fresh thyme
- kosher salt and black pepper, to taste
- chili flakes, to taste
Additional:
- 3 cups cherry tomatoes, halved
- 2–3 balls burrata cheese, at room temperature
- grilled bread or crackers, for serving
Instructions
- In a bowl, prepare the marinade: Whisk together olive oil, balsamic vinegar, champagne vinegar, honey, garlic, basil, thyme, salt, pepper, and chili flakes.
- Add tomatoes: Toss cherry tomatoes in the marinade until well coated. Let marinate for 30 minutes at room temperature or refrigerate overnight, then return to room temperature before serving.
- Serve: Break burrata over a serving bowl and arrange marinated tomatoes around it. Serve with grilled or toasted bread.
