  • 1/2 cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 2 tbsp champagne or apple cider vinegar
  • 2 tsp honey
  • 12 cloves garlic, grated
  • 1/2 cup fresh basil, chopped
  • 2 tbsp chopped fresh thyme
  • kosher salt and black pepper, to taste
  • chili flakes, to taste

Additional:

  • 3 cups cherry tomatoes, halved
  • 23 balls burrata cheese, at room temperature
  • grilled bread or crackers, for serving

Instructions

  1. In a bowl, prepare the marinade: Whisk together olive oil, balsamic vinegar, champagne vinegar, honey, garlic, basil, thyme, salt, pepper, and chili flakes.
  2. Add tomatoes: Toss cherry tomatoes in the marinade until well coated. Let marinate for 30 minutes at room temperature or refrigerate overnight, then return to room temperature before serving.
  3. Serve: Break burrata over a serving bowl and arrange marinated tomatoes around it. Serve with grilled or toasted bread.
