Oats Mixture:
- 2 cups old fashioned rolled oats
- 2 cups plain yogurt (regular or coconut yogurt)
- 1 cup milk (regular or plant-based)
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cardamom
Mango Puree:
- 1/2 cup mango (plus more for garnish)
Optional Garnish:
- 1 teaspoon chia seeds for garnish
Instructions
- Oats Mixture: In a large mixing bowl, combine the oats, yogurt, milk, honey, vanilla, and cardamom. Stir until well combined.
- Mango Puree: In a food processor or blender or with an immersion blender, blend the mango until you have a smooth puree.
- Combine: Stir the mango puree into the oat mixture and mix until well combined.
- Refrigerate: Divide the mixture into 4 jars, place the lids on, and refrigerate overnight or for at least 6 hours.
- Serve: Remove from the refrigerator and garnish with chopped mango before serving.
