Corn Ribs:

  • 3 ears fresh corn

Seasoning:

  • 2 tablespoons mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon fresh jalapeno, minced
  • juice from 1/2 lime
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon salt

Toppings:

  • 1/2 cup cotija cheese, crumbled
  • 1/3 cup fresh cilantro, diced

Instructions

  1. Prep Corn Ribs Clean corn ears and cut into halves. Score each half and cut through the center of the core.
  2. Spices and Sauces Mix spices, mayonnaise, sour cream, lime juice, and jalapeno in a bowl.
  3. Cook the ‘Ribs’ Oil and season the corn ribs, then grill for 8 minutes on each side.
