Mixed Berry Filling
- 2 cups blueberries
- 2 cups raspberries
- 2 cups blackberries
- 1/4 cup lemon juice
- 1/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
Crumble Topping
- 1 1/2 cups all-purpose flour
- 3/4 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/2 cup cold butter, cubed
Instructions
- Prepare the Oven and Pan: Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking pan to prevent sticking and ensure easy serving.
- Make the Berry Filling: In a large mixing bowl, combine the blueberries, raspberries, blackberries, lemon juice, granulated sugar, cornstarch, ground cinnamon, and vanilla extract. Gently toss everything together until the berries are evenly coated with the mixture. Pour the berry filling, along with any juices, into the prepared baking pan and spread them out in an even layer.
- Prepare the Crumble Topping: In a medium bowl (or a food processor), combine the all-purpose flour, brown sugar, and ground cinnamon. Add the cold, cubed butter to the mixture. Use a pastry cutter or pulse with a food processor to work the butter in until the mixture forms coarse crumbs with some larger clumps remaining.
- Add the Topping: Evenly sprinkle the crumble topping over the berry filling, making sure the berries are completely covered.
- Bake: Place the pan in the preheated oven and bake for 40-45 minutes, or until the crumble topping is golden brown and the berry mixture is bubbling around the edges.
- Serve: Remove from the oven and let it cool slightly before serving. Enjoy warm, optionally with a scoop of vanilla ice cream or whipped cream.
Notes
- If using frozen berries, double the amount of cornstarch to compensate for the additional liquid.
- This dessert can be made ahead and reheated before serving.
- Use any combination of berries you like or depending on what’s in season.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
