Potato Mixture:
- 3 lbs Yukon Gold potatoes, or red skinned potatoes
- 3 - 4 cloves garlic, sliced thick
- 5 Tbsp unsalted butter
- 1/4 cup milk
- 2 Tbsp Parmesan cheese, grated
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- Salt and pepper, to taste
Topping:
- 4 oz fresh mozzarella cheese, sliced
- Salt and pepper, to taste
Instructions
- Preheat oven and prepare pie dish: Preheat oven to 400°F. Butter or coat a 9″ pie dish with cooking spray.
- Cook potatoes: Peel and chop potatoes. Cook with garlic in a pot of boiling salted water until tender. Drain and return to pot.
- Mash potatoes: Remove excess moisture from potatoes, then mash with butter and milk. Season with salt and pepper.
- Assemble and bake: Transfer mashed potatoes to the pie dish. Top with Parmesan, mozzarella slices, basil, oregano, salt, and pepper. Bake for 30 minutes until golden and bubbly.
- Serve: Allow the pie to rest for a few minutes before serving. Enjoy!
