Potato Mixture:

  • 3 lbs Yukon Gold potatoes, or red skinned potatoes
  • 3 - 4 cloves garlic, sliced thick
  • 5 Tbsp unsalted butter
  • 1/4 cup milk
  • 2 Tbsp Parmesan cheese, grated
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and pepper, to taste

Topping:

  • 4 oz fresh mozzarella cheese, sliced
  • Salt and pepper, to taste

Instructions

  1. Preheat oven and prepare pie dish: Preheat oven to 400°F. Butter or coat a 9″ pie dish with cooking spray.
  2. Cook potatoes: Peel and chop potatoes. Cook with garlic in a pot of boiling salted water until tender. Drain and return to pot.
  3. Mash potatoes: Remove excess moisture from potatoes, then mash with butter and milk. Season with salt and pepper.
  4. Assemble and bake: Transfer mashed potatoes to the pie dish. Top with Parmesan, mozzarella slices, basil, oregano, salt, and pepper. Bake for 30 minutes until golden and bubbly.
  5. Serve: Allow the pie to rest for a few minutes before serving. Enjoy!

  • Fresh mozzarella may need additional salt, so adjust seasoning accordingly.
