This Nutella Cookie Pie is a decadent and gooey dessert that combines the rich flavors of Nutella and chocolate chips baked within a soft cookie crust. Cookie Dough

  • 1/2 cup butter, softened
  • 1/2 cup light brown sugar, lightly packed
  • 1/3 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 1 cup all purpose flour (plain flour)
  • 1/2 teaspoon baking soda
  • 1/3 teaspoon salt
  • 1/2 cup dark/semi-sweet chocolate chips

Nutella Layer

  • 1/2 cup Nutella, melted (or Refined Sugar-Free Nutella Spread)

Instructions

  1. Preheat and prepare pan: Preheat oven to 350° F (175°C). Line a 9-inch cast iron skillet or pie dish with baking/parchment paper and set aside.
  2. Mix dough base: In a large bowl, whisk the softened butter, light brown sugar, granulated sugar, and vanilla extract until light and creamy. Whisk in the egg until fully combined.
  3. Add dry ingredients: Add the flour, baking soda, and salt to the wet ingredients. Mix gently until just combined to avoid overmixing the dough.
  4. Add chocolate chips and layer dough: Fold in half of the chocolate chips. Spoon half of the cookie dough evenly onto the prepared baking dish lined with parchment.
  5. Melt Nutella: Microwave the Nutella for 30 seconds until thinner and easier to spread evenly over the cookie dough layer.
  6. Assemble pie layers: Spread the warmed Nutella evenly over the first cookie dough layer, leaving about a 1-inch edge around the pan. Top with the remaining cookie dough, smoothing the surface with the back of a spoon or fingers if needed.
  7. Add finishing chocolate chips: Sprinkle the remaining chocolate chips evenly over the top of the cookie dough layer.
  8. Bake: Bake in the preheated oven for 25-30 minutes for a gooey cookie. For a firmer ‘set’ cookie, cover the pie loosely with aluminum foil after 30 minutes and continue baking for an additional 10 minutes.
  9. Cool and serve: Remove from oven and allow to cool for about 10 minutes before slicing and serving.

Notes

  • Warm the Nutella in the microwave for 30-60 seconds until it becomes thinner and runnier. This makes spreading over the cookie dough much easier and more even.
  • Using parchment paper in the baking dish helps with easy removal and cleanup.
  • Adjust baking time based on your preferred cookie texture: less time for gooey, more time for set.
