Snack Mix
- 9 oz Oyster crackers (approximately 5 cups)
Toffee Coating
- 1 cup Dark brown sugar (or light brown sugar)
- 1 cup Unsalted butter
- 1 tsp Vanilla extract
- 2 tsp Ground cinnamon (divided)
- 3 tbsp Granulated sugar
- 3/4 tsp Kosher salt
Instructions
- Preheat and Prepare Baking Sheet: Preheat your oven to 350°F. Line an extra-large rimmed baking sheet with aluminum foil and parchment paper to prevent sticking.
- Arrange Crackers and Mix Cinnamon Sugar: Spread the oyster crackers in a single even layer on the prepared baking sheet. In a small bowl, combine 1 teaspoon of ground cinnamon, granulated sugar, and kosher salt; set this cinnamon sugar mixture aside for later topping.
- Make Toffee Sauce: In a small heavy-bottomed saucepan, melt the butter with the brown sugar over medium heat. Bring the mixture to a boil, then boil for 2 minutes while stirring occasionally to make a smooth toffee sauce. Remove from heat and stir in the vanilla extract and the remaining 1 teaspoon of cinnamon.
- Coat Crackers and Bake: Pour the warm toffee sauce evenly over the oyster crackers on the baking sheet and gently toss to coat all the crackers uniformly. Bake in the preheated oven for 10 minutes until the mixture is bubbly and golden brown.
- Add Cinnamon Sugar and Cool: Remove the baking sheet from the oven and immediately sprinkle the reserved cinnamon sugar mixture evenly over the hot coated crackers. Allow the snack mix to cool completely on the baking sheet; it will harden as it cools.
- Break Apart and Serve: Once fully cooled and set, break the snack mix into pieces or clusters and transfer to a serving bowl or airtight container.
Notes
- If you don’t have parchment paper, be sure to butter the aluminum foil or the baking sheet to prevent the toffee from sticking.
- Store the oyster cracker snack mix in an airtight container or resealable bag for up to one week to maintain freshness and crunch.
- To reheat and refresh the snack mix, spread it in a single layer on a rimmed baking sheet and warm it in a 325°F oven for about 5 minutes.
