Cake:
- 1 cup butter, room temperature
- 1 cup sugar
- 1 tsp vanilla
- 3 eggs
- 1 cup vanilla yogurt, drained for a couple of hours in the fridge (see notes)
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- pinch of salt
- 3/4 cup Peanut Butter M&M’S, roughly chopped
Frosting:
- 1 cup butter, room temperature
- 2 cups creamy peanut butter
- 5 cups powdered sugar
- 1/4 cup heavy cream (see notes)
Instructions
- Cake: Heat the oven to 350F. Grease and line two 9-inch round baking pans with parchment paper. Set aside.
- Frosting: Cream peanut butter and butter. Gradually add powdered sugar. For a cake ring, add heavy cream and whip. Assemble cake with frosting between layers and on top. Decorate with M&M’S.
In a mixing bowl, cream butter and sugar. Add vanilla, then eggs one at a time. Mix in yogurt, flour, baking powder, and salt. Fold in chopped M&M’S. Divide batter into pans and bake for 22-25 minutes.
Notes
- To drain vanilla yogurt, use a colander lined with cheesecloth and refrigerate.
- A cake ring helps secure the layers; omit cream if not using one.
