Instructions

  1. Blend Mousse Ingredients: Blend the cottage cheese, creamy peanut butter, chocolate protein powder, medjool date syrup, and vanilla extract together in a blender until smooth, scraping the sides as needed to facilitate even blending.
  2. Prepare Storage Jars: Optionally, place crushed gluten-free cookies and/or crushed chocolate gems at the bottom of 6oz storage jars to add texture and flavor layers.
  3. Layer Mousse: Pour the blended cottage cheese mousse over the cookie crumbs in the jars to create the mousse layer.
  4. Chill: Refrigerate the jars for at least a few hours, preferably overnight, to allow the mousse to thicken and set for optimal texture.
  5. Make Ganache: Melt the peanut butter and dark chocolate chips together in the microwave for 30-45 seconds until smooth, then pour this ganache over the chilled mousse layer and sprinkle with additional dark chocolate chips if desired.
