Ingredients
Scale
Cottage Cheese Mousse
- 16 oz cottage cheese
- 3 tbsp creamy peanut butter (or almond butter)
- 1/3 cup chocolate protein powder
- 3 tbsp medjool date syrup (or maple syrup)
- 1 tsp vanilla extract
Ganache
- 1 tbsp dark chocolate chips
- 3 tbsp creamy peanut butter
Mini Monster Cookie Dough Balls
- 1/4 cup creamy peanut butter
- 3 tbsp vanilla protein powder
- 3 tbsp pure maple syrup
- 1 tsp vanilla extract
- 1 tbsp dye-free chocolate gems (crushed)
Instructions
- Blend Mousse Ingredients: Blend the cottage cheese, creamy peanut butter, chocolate protein powder, medjool date syrup, and vanilla extract together in a blender until smooth, scraping the sides as needed to facilitate even blending.
- Prepare Storage Jars: Optionally, place crushed gluten-free cookies and/or crushed chocolate gems at the bottom of 6oz storage jars to add texture and flavor layers.
- Layer Mousse: Pour the blended cottage cheese mousse over the cookie crumbs in the jars to create the mousse layer.
- Chill: Refrigerate the jars for at least a few hours, preferably overnight, to allow the mousse to thicken and set for optimal texture.
- Make Ganache: Melt the peanut butter and dark chocolate chips together in the microwave for 30-45 seconds until smooth, then pour this ganache over the chilled mousse layer and sprinkle with additional dark chocolate chips if desired.
- Prepare Cookie Dough Balls: Mix together the creamy peanut butter, vanilla protein powder, pure maple syrup, vanilla extract, and crushed dye-free chocolate gems in a bowl. Roll the mixture into mini balls.
- Top and Serve: Add the mini monster cookie dough balls on top of the mousse cups and enjoy immediately or keep refrigerated for a grab-and-go treat.
