Description

Enjoy these vibrant Red, White, and Blue Firecracker Popsicles—a festive and healthy summer treat made with fresh strawberries, blueberries, and creamy low-fat yogurt. Perfect for celebrating holidays or enjoying as a refreshing snack, these eye-catching pops are quick to prepare, fun to assemble with beautifully swirled layers, and naturally sweetened.

Ingredients

Units Scale

Fruit Layers

  • 1/2 pound (about 1 1/2 cups) strawberries, hulled and quartered
  • 1/2 pound (about 1 1/2 cups) blueberries

Sweetener

  • 1/4 cup sugar, divided

Yogurt Layer

  • 1 1/4 cups low-fat plain yogurt

Instructions

  1. Prepare Strawberry Puree: In a food processor fitted with the metal blade, add the hulled and quartered strawberries along with 1 tablespoon of sugar. Puree until completely smooth. Transfer the strawberry puree to a small bowl and set aside.
  2. Prepare Blueberry Puree: Rinse the food processor and add the blueberries with 1 tablespoon of sugar. Puree until smooth, then set the blueberry puree aside in a separate bowl.
  3. Mix Yogurt Filling: In another small bowl, whisk together the low-fat plain yogurt and remaining 2 tablespoons of sugar until well combined and smooth.
  4. Layer the Pops: Alternately pour small amounts of the strawberry puree, blueberry puree, and sweetened yogurt into popsicle molds to create 3 to 5 layers in each mold, resembling stripes.
  5. Swirl and Freeze: Using a skewer, gently swirl the mixtures together with an up-and-down motion to create a marbled effect. Insert popsicle sticks into each mold. Freeze the popsicles until completely solid, about 2 1/2 to 3 hours or overnight for best results.

Notes

  • If you prefer a more natural sweetness, reduce the sugar or substitute with honey or agave nectar.
  • For a more distinct layered look, avoid swirling the mixtures together.
  • Popsicles can be stored in the freezer for up to 2 weeks.
  • To easily remove popsicles from molds, briefly run the outside of the molds under warm water.
