Cabbage Steaks:
- 1 large head green cabbage
- 1/4 cup olive oil

Mustard Vinaigrette:

- 1 tablespoon Dijon Mustard
- 1 tablespoon honey or to taste
- 1 tablespoon water or more if needed
- 1 clove garlic, minced
Instructions
- Preheat oven: Preheat oven to 375 degrees. Slice cabbage into thick ‘steaks.’
- Roast cabbage: Drizzle with olive oil, season with salt and pepper, and roast for 15-20 minutes.
- Make vinaigrette: Whisk together remaining olive oil, red wine vinegar, mustards, honey, water, garlic, salt, and pepper.
- Serve: Drizzle vinaigrette over cabbage steaks.

- Cabbage can also be cut into wedges.
