Description

This Sausage and Veggies Skillet is a flavorful and easy one-pan meal that comes together in just 30 minutes. With a mix of juicy sausage, colorful bell peppers, zucchini, and sweet corn, this dish is a satisfying dinner option for any night of the week.


Ingredients

Corn Kernels:

  • 2 cups corn kernels (3 ears completely cooked)

Olive Oil:

  • 1 tablespoon

Sausage:

  • 12 oz sausage, cooked (such as cajun sausage, andouille sausage, or smoked sausage)

Red Bell Pepper:

  • 1 large, diced

Zucchini:

  • 1 large zucchini, sliced

Chili Powder:

  • 1/2 teaspoon

Fresh Cilantro:

  • Chopped, for garnish

Instructions

  1. Cook sausage: Heat 1 tablespoon of olive oil in a cast-iron skillet over medium heat. Slice the cooked sausage into coins and add to the skillet. Cook for 5 minutes on one side, then flip and cook for about 3 minutes on the other side. Remove the sausage from the skillet.
  2. Prepare veggies: In the same skillet, add the diced bell pepper and cook for 4 minutes. Add the sliced zucchini and cook for 3 minutes. Slice the corn kernels off the cob. Combine the cooked sausage, bell pepper, zucchini, and corn in the skillet. Add reserved oil, chili powder, and heat on low.
  3. Assemble: Remove from heat and top with chopped cilantro before serving.

Notes

  • Seasoning with salt may not be necessary due to the saltiness of the sausage. Adjust to taste.
