For the Chicken:
- 1 1/2 lb boneless chicken breasts or thighs
- 1/4 cup olive oil
- 2 lemons, juice and zest from 1 + 1 sliced
- 2 tbsp Harissa seasoning
- 1 tbsp honey

For the Vegetables:
- 2 medium sweet potatoes, cut into 1 inch chunks
- 1 sweet onion, sliced
- 1 can chickpeas, drained
- 1/2 cup crumbled feta
- 1/3 cup green olives, smashed
- plain greek yogurt and fresh mint or cilantro, for serving
Instructions
- Preheat the oven: Preheat the oven to 425 degrees F.
- Prepare the Chicken: On a rimmed baking sheet, combine the chicken, olive oil, lemon juice, lemon zest, harissa seasoning, honey, salt, and pepper. Toss well to coat. Add the sweet potatoes, onions, and chickpeas, and toss with olive oil, salt, and pepper. Arrange in a single layer. Roast in the oven for 40-45 minutes.
- Prepare the Toppings: Mix feta, olives, and olive oil in a bowl.
- Serve: Top the cooked chicken with the feta mixture, olives, and yogurt. Sprinkle with mint or cilantro before serving.
