These Avocado Chicken Salad Lettuce Wraps are a perfect combination of creamy avocado, tender chicken, and crunchy walnuts, all wrapped in fresh Bibb lettuce leaves. A refreshing and satisfying meal that’s perfect for lunch or a light dinner.

Bibb Lettuce
- 2 1/2 cups shredded chicken*
- 1 large ripe avocado
- 1 garlic clove, minced
- 2 1/2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon agave nectar
- 1 tablespoon freshly chopped tarragon (or 1 teaspoon dried)
- 1 1/2 tablespoons freshly chopped dill (or 1 1/2 teaspoons dried)
- 1/2 tablespoon fresh lemon juice
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 cup chopped walnuts
Instructions
- Place shredded chicken in a large bowl.
- Pour the sauce over the chicken and stir to combine evenly. Add walnuts.
- Refrigerate, covered, for at least 1 hour for the best taste.
- Place a heaping 1/4 cup in the center of each piece of Bibb Lettuce. Wrap and serve.
Combine avocado, garlic, mayo, mustard, agave nectar, herbs, lemon juice, salt, and pepper in a food processor or blender; puree until smooth. Add 1/2-1 tablespoon of water to achieve a thick sauce texture.
