Fajita Seasoning Mix
- 2 teaspoons ground cumin
- 2 teaspoons chili powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon crushed red pepper flakes
Chicken Fajitas
- 4 boneless skinless chicken breasts
- 2 tablespoons olive oil, divided
- 3 large multi-color bell peppers, sliced
- 1 medium red onion, sliced
- 2 cloves garlic, minced
- 1/4 cup lime juice (about 2 limes)
- 12 (6-inch) flour tortillas, for serving
Instructions
- Prepare the Fajita Seasoning: In a small bowl, combine ground cumin, chili powder, onion powder, salt, and crushed red pepper flakes. Mix well to make your fajita seasoning blend.
- Season the Chicken: Sprinkle half of the seasoning mix over both sides of the chicken breasts, reserving the other half for the vegetables.
- Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5 to 7 minutes per side, until the chicken is fully cooked and reaches an internal temperature of 165°F. Remove the chicken from the skillet and let it rest.
- Sauté the Vegetables: Add the remaining 1 tablespoon of olive oil to the skillet. Once heated, add the sliced bell peppers and red onion. Sauté for 5 to 7 minutes until the vegetables are tender-crisp.
- Finish the Vegetables: Add the remaining seasoning mix and minced garlic during the last two minutes of cooking. Sauté for 1 to 2 minutes until fragrant, then turn off the heat.
- Slice and Combine: Slice the cooked chicken breasts into long strips. Return the sliced chicken to the skillet with the vegetables. Drizzle lime juice over the mixture and toss everything together until well combined.
- Serve: Spoon the chicken and vegetable mixture onto warm flour tortillas. Serve plain or with your choice of toppings, such as sour cream, cilantro, guacamole, or salsa.
Notes
- Warm your tortillas for the best texture; either heat them on a skillet or wrap in foil and warm in the oven.
- For extra flavor, marinate the chicken in lime juice and seasoning for 30 minutes before cooking.
- You can substitute chicken with steak or shrimp for variety.
- This recipe is easy to double or halve as needed.
- Serve with rice, beans, or a fresh green salad to make it a complete meal.
