Description

This Slow Cooker Beef & Broccoli recipe is a delightful blend of tender beef strips, flavorful sauce, and crisp broccoli florets. The convenience of the slow cooker makes it a perfect weeknight meal!


Ingredients

For the Sauce:

  • 1 cup low-sodium beef broth
  • 1/2 cup low-sodium soy sauce
  • 1/3 cup dark brown sugar
  • 1 tablespoon sesame oil
  • 3 teaspoons minced garlic (about 3 cloves)

For the Rest:

  • 1 1/2 pounds boneless beef chuck roast, cut into 1/4-inch strips
  • 2 tablespoons cornstarch
  • 1 (12-ounce) bag frozen broccoli florets (about 3 cups)

Instructions

  1. Make the Sauce: Whisk together beef broth, soy sauce, brown sugar, sesame oil, and garlic in a medium bowl.
  2. Prepare the Beef: Place beef strips in the slow cooker, pour the sauce over, and toss to coat.
  3. Cook: Cook on LOW for 2.5-3.5 hours. An hour before done, mix 1/4 cup sauce with cornstarch, then add back to the slow cooker.
  4. Add Broccoli: In the last 30 minutes, add frozen broccoli to the slow cooker and stir. Cover and cook until done.
  5. Serve: Garnish with green onions and sesame seeds. Serve with white rice.

  • Storing and Reheating Instructions: Store leftovers in an airtight container in the fridge for up to 5 days, or freeze for up to 3 months. Thaw overnight in the fridge, then reheat on the stove over medium heat.
