For the Brisket:

  • 1 1/2 tablespoons packed light brown sugar
  • 2 teaspoons kosher salt
  • 1 teaspoon ground cumin
  • 3/4 teaspoon black pepper
  • 1 (2-lb.) trimmed beef brisket
  • 2 chipotle chiles in adobo sauce, minced (about 2 Tbsp.)
  • 3 garlic cloves, smashed

For Serving:

  • 1 cup barbecue sauce
  • 12 slider buns, toasted
  • 1/2 cup spicy pickle chips

Instructions

  1. Prepare the Brisket: Combine brown sugar, salt, cumin, and black pepper. Rub the brisket with the sugar mixture. Place brisket, chipotle chiles, and garlic in the slow cooker.
  2. Cook the Brisket: Cover and cook on HIGH for 4 to 5 hours or on LOW for about 8 hours until tender.
  3. Shred the Brisket: Transfer brisket to a cutting board, shred using forks, and place in a bowl. Add barbecue sauce and reserved cooking liquid; stir to coat.
  4. Assemble the Sliders: Divide the brisket among bottom bun halves. Top with pickle chips and bun tops.
