Strawberry Cake
- 1 box strawberry cake mix, plus ingredients called for on the package
- 1 cup white chocolate chips
Cheesecake Swirl
- 1/2 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1 1/2 tsp vanilla extract
- 2 cups powdered sugar
- 1 cup diced fresh strawberries
Toppings (Optional)
- Whipped cream
- Strawberries
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350 degrees Fahrenheit and grease a 9×13-inch baking pan to prevent sticking. Set aside while you prepare the batter.
- Make Cake Batter: Prepare the strawberry cake mix according to the package instructions, combining all ingredients as directed. Once mixed, pour the batter evenly into the prepared pan.
- Add White Chocolate Chips: Sprinkle 1 cup of white chocolate chips evenly over the batter to add bursts of sweet, creamy flavor throughout the cake.
- Prepare Cheesecake Mixture: In a bowl, combine the melted butter, softened cream cheese, and vanilla extract. Mix until smooth and fully combined.
- Add Powdered Sugar and Strawberries: Gradually add the powdered sugar to the cheesecake mixture and mix until incorporated. Fold in the diced fresh strawberries gently to preserve their shape.
- Swirl Cheesecake Mixture into Cake: Spoon dollops of the cheesecake mixture over the top of the cake batter in the pan. Using a knife, gently swirl the mixture into the batter to create a marbled effect.
- Bake: Place the pan in the preheated oven and bake for 40 to 45 minutes. The cake should be set, though still slightly moist in the center. Remove from the oven and allow to cool completely in the pan.
- Serve: Once cooled, cut the cake into 12 slices. Top with optional whipped cream and fresh strawberries if desired for an extra special touch.
Notes
- You can create any flavor variation of Earthquake Cake by substituting different cake mixes and corresponding add-ins.
- If you prefer a more textured look, you can leave the cheesecake mixture in dollops on top without swirling; it will sink into the cake as it bakes.
- The white chocolate chips and fresh strawberries are optional but highly recommended for enhanced flavor and texture.
- The cake’s rustic, ‘messy’ appearance upon baking is normal and part of the charm of Earthquake Cake.
- Serve with your favorite toppings like whipped cream or ice cream to complement the flavors.
