Description

Ingredients

  • 6 cups sliced cucumbers (about 3 medium cucumbers)

Red Onion:

  • 1 cup red onion thinly sliced

Pickling Mixture:

  • 3 teaspoons salt
  • 1 1/4 cup apple cider vinegar
  • 1 cup water
  • 5 tablespoons honey
  • 1 teaspoon minced garlic
  • 1/2 teaspoon crushed red pepper

Instructions

  1. Prepare Vegetables: Slice cucumbers and red onion. Sprinkle with salt and let sit for 1 hour to remove excess moisture.
  2. Make Pickling Liquid: In a saucepan, combine vinegar, water, honey, garlic, and crushed red pepper. Boil for 1 minute, then let cool.
  3. Assemble Pickles: Rinse and dry cucumbers and onions. Pack into jars and pour in pickling liquid.
  4. Chill and Enjoy: Refrigerate for at least 3 hours before serving.
