Description

Sweet Chili Chicken Delight is a flavorful baked chicken dish featuring tender cubed chicken breasts coated in a light corn starch and seasoning mix, baked to perfection with bell peppers and jalapeños, and then tossed in a rich, aromatic sweet chili sauce made with garlic, ginger, butter, and honey. This easy-to-make recipe offers a perfect balance of sweet and spicy flavors, garnished with fresh lime slices and green onions, ideal for serving over rice or salads for a delightful meal.

Ingredients

Units Scale

Chicken:

  • 0.75-1 lb chicken breasts, cubed
  • 1 Tbsp corn starch
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1/2 tsp red pepper

Sweet Chili Sauce:

  • 1 Tbsp butter
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 3/4 cup sweet chili sauce
  • 1-2 Tbsp honey

Garnish:

  • 1 lime, sliced
  • 3 Tbsp green onions, chopped

Instructions

  1. Preheat the oven: Preheat your oven to 375ºF (190ºC) to prepare for baking the chicken and vegetables evenly.
  2. Prepare the chicken: Cube the chicken breasts into 1-inch pieces. Toss them in a bowl with corn starch, black pepper, salt, and red pepper to lightly coat and season thoroughly.
  3. Bake chicken: Arrange the seasoned chicken cubes on a baking sheet along with sliced bell peppers and jalapeños. Bake in the preheated oven for 20 minutes, flipping the chicken pieces halfway through to ensure even cooking and browning.
  4. Make sweet chili sauce: While the chicken bakes, melt butter in a saucepan over medium heat. Sauté the minced garlic and ginger until fragrant, about 1-2 minutes. Then add the sweet chili sauce and honey, stirring well to combine and heat through.
  5. Combine: Once the chicken and veggies are cooked, transfer them to a large bowl and pour the warm sweet chili sauce over. Toss everything together until the chicken and vegetables are well coated with the sauce.
  6. Serve: Serve the sweet chili chicken hot over a bed of rice or alongside a fresh salad. Garnish with chopped green onions and lime slices to add a fresh, zesty finish.
