  • 1/3 cup all-purpose flour

Instructions

  1. Prepare the Sweet Potatoes: Cook sweet potatoes by microwaving them wrapped in wet paper towels until soft (8-15 minutes) or boil them until fork-tender (about 30 minutes). When cool enough to handle, cut in half and scoop out the pulp.
  2. Mix Sweet Potato Base: In a large mixing bowl, combine sweet potato pulp, granulated sugar, eggs, softened butter, and vanilla extract. Beat with an electric mixer for about 2 minutes until the mixture is fairly smooth.
  3. Assemble Base in Casserole Dish: Spoon the sweet potato mixture into a greased 2-quart casserole dish, spreading it evenly.
  4. Prepare Topping: In a small mixing bowl, combine brown sugar, chopped pecans, all-purpose flour, and softened butter. Mix with a fork until the topping forms large crumbly pieces.
  5. Top and Bake: Sprinkle the pecan crumb topping evenly over the sweet potato mixture. Bake in a preheated oven at 350°F (175°C) for 30 minutes or until heated through and the topping is golden.
  6. Optional Make-Ahead: This casserole can be prepared in advance and baked later. If baking from cold, add 15 minutes to baking time. If frozen, thaw before baking.
