Ingredients

Units Scale

Meat and Seasoning

  • 1 pound lean ground beef
  • 1 ounce envelope taco seasoning
  • 2/3 cup salsa
  • 1 can (10 ounces) Mild Red Enchilada Sauce

Cheese and Vegetables

  • 2 cups shredded cheddar cheese, divided
  • 1/2 cup thinly sliced green onions, divided

Base and Toppings

  • 8 cans large canned biscuits
  • Assorted taco toppings such as lettuce, tomato, salsa, and sour cream

Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius) to prepare for baking the casserole.
  2. Prepare Baking Dish: Spray a 9×13-inch baking dish with non-stick spray to prevent sticking during baking.
  3. Cook Ground Beef: In a large pan over medium heat, brown the lean ground beef until fully cooked and no longer pink. Drain off excess grease to reduce fat content.
  4. Add Seasoning and Sauces: Stir in the salsa, mild red enchilada sauce, and taco seasoning into the cooked beef, mixing well to combine all the flavors evenly.
  5. Add Cheese and Onions: Mix half of the shredded cheddar cheese and half of the sliced green onions into the beef mixture until evenly incorporated.
  6. Prepare Biscuits: Cut each of the canned large biscuits into eight pieces and gently fold them into the beef and cheese mixture, being careful not to crush the biscuit pieces.
  7. Transfer to Baking Dish: Pour the combined mixture evenly into the prepared baking dish and spread smoothly.
  8. Bake Initial Stage: Bake in the preheated oven for 20 minutes to allow the biscuits to cook through and the flavors to meld.
  9. Add Remaining Cheese: Remove the casserole from the oven and sprinkle the remaining shredded cheddar cheese on top evenly.
  10. Bake Final Stage: Return the casserole to the oven and bake for an additional 5 minutes until the cheese is melted and bubbly.
  11. Garnish and Serve: Remove from oven and garnish with the remaining green onions and your choice of taco toppings such as lettuce, tomato, salsa, and sour cream. Serve warm and enjoy!

Notes

  • To reduce fat, use lean ground beef or substitute with ground turkey.
  • You can customize the taco toppings based on preference, adding avocado, jalapeños, or olives.
  • Cooking times may vary depending on your oven; ensure the biscuits are cooked through before serving.
  • For a gluten-free version, substitute the canned biscuits with gluten-free biscuit dough.
