Gelatin Mixture:
- 2 Tbsp. unflavored gelatin
- 1/4 cup cold water
- 1/4 cup boiling water
Aspic Base:
- 4 cups tomato juice
- 1 Tbsp. onion, minced
- 1 tsp. sugar
- 1 tsp. table salt
- 1 tsp. seasoned salt
- 1 tsp. Worcestershire sauce
- 1/2 tsp. celery seeds
- 2 bay leaves
- 2 whole cloves
- 2 Tbsp. fresh lemon juice
Garnish:
- Fresh parsley, for garnish
Instructions
- Dissolve gelatin: Sprinkle the gelatin over the cold water in a bowl; let stand 5 minutes. Whisk in the boiling water until the gelatin is dissolved.
- Combine ingredients, and bring to a boil: Stir together the tomato juice and next 8 ingredients in a large saucepan; bring to a boil over medium-high. Reduce heat, and simmer, stirring occasionally, 15 minutes. Pour through a wire-mesh strainer into a bowl; stir in the lemon juice and gelatin.
- Pour mixture into ring mold, and chill: Pour into a 10-inch ring mold coated with cooking spray or 6 individual molds; chill 6 hours or until set.
