- 500 g turkey mince
- 1 tbsp fresh thyme leaves
- 1 tsp sea salt
- ¼ tsp black pepper

- 375 g ready rolled puff pastry (1 pack)
- 130 g cranberry sauce
- 1 tbsp milk
- Spray oil for baking trays
Instructions
- Preheat the Oven: Set your oven to 190ºC fan assisted (or 210ºC non-fan) to prepare for baking the sausage rolls.
- Prepare the Filling: In a large bowl, combine the turkey mince with fresh thyme, sea salt, black pepper, and garlic powder. Mix thoroughly using your hands to distribute the seasonings evenly throughout the meat.
- Prepare the Pastry: Unroll the puff pastry and slice it lengthwise into two equal strips. Spread half of the cranberry sauce along the center of each pastry strip.
- Form Sausages: Shape the turkey mixture into two long sausage forms, placing them directly on top of the cranberry sauce on each pastry strip.
- Seal the Pastry: Brush one long edge of each pastry strip with the milk to help seal the roll. Roll the pastry tightly around the turkey, starting from the edge closest to you, and ensure the sealed edge is underneath the roll.
- Cut into Rolls: Using a sharp knife, cut each long roll into smaller individual sausage rolls.
- Prepare Baking Trays: Lightly spray two baking trays with oil and arrange the sausage rolls evenly on them. Brush the tops of the sausage rolls with the remaining milk for a golden finish.
- Score the Tops: Use scissors to make about three small cuts on the top of each sausage roll to allow steam to escape and add decorative detail.
- Bake: Place the trays in the preheated oven and bake the sausage rolls for 20 minutes or until the pastry is crisp and golden, and the turkey is cooked through.
- Cool: Once baked, transfer the sausage rolls to a wire rack promptly to cool slightly before serving.
