- 2 tablespoons olive oil

- 150 ml milk
- 2 eggs
- 5 tablespoons olive oil

- 3 large sheets phyllo dough
Instructions
- Prepare the filling: Heat 2 tablespoons of olive oil in a skillet over medium heat. Add minced garlic and chopped onion, sautéing until the onion becomes translucent and fragrant. Stir in the chopped spinach and cook until wilted and softened. Remove from heat and let cool slightly before mixing in the crumbled feta cheese. Season the mixture with salt and freshly ground black pepper to taste.
- Mix the batter: In a bowl, whisk together milk, eggs, and 5 tablespoons of olive oil until well combined. This will be used to brush the phyllo dough to add moisture and help it crisp beautifully in the oven.
- Assemble the borek: Preheat your oven to 180°C (350°F). Lay one sheet of phyllo dough on a clean work surface and brush lightly with the batter mixture. Repeat with the second sheet, layering it on top and brushing again. Spread the spinach and feta filling evenly over the phyllo sheets. Cover with the third sheet of phyllo dough, brushing the top generously with the batter.
- Bake the borek: Carefully transfer the assembled borek onto a baking tray lined with parchment paper. Bake in the preheated oven for approximately 20 minutes or until the phyllo is golden brown and crisp. Remove from oven and allow to cool slightly before slicing and serving.
