Description

Green Beans:

  • 600 g (18oz) green beans, extra thin

Shallot Mixture:

  • 1 shallot, finely chopped
  • 1 white peach, sliced finely
  • 1 tablespoon blanched, unsalted almonds
  • 20 fresh basil leaves, finely chopped or torn
  • 3 tablespoons extra virgin olive oil
  • 1/4 teaspoon salt (fleur de sel or Maldon flakes)

Instructions

  1. Cook the Green Beans: Top and tail the green beans and cook in simmering unsalted water for 5-10 minutes until al dente. Add a pinch of bicarbonate of soda to retain color and texture. Drain and cool.
  2. Prepare Shallot Mixture: Sauté shallot in olive oil until golden. Add almonds to toast, then toss in green beans. Remove from heat, add basil, salt, and pepper. Transfer to a dish.
  3. Finish and Serve: Top with sliced white peach and serve warm or cold.
