Green Beans:
- 600 g (18oz) green beans, extra thin
Shallot Mixture:
- 1 shallot, finely chopped
- 1 white peach, sliced finely
- 1 tablespoon blanched, unsalted almonds
- 20 fresh basil leaves, finely chopped or torn
- 3 tablespoons extra virgin olive oil
- 1/4 teaspoon salt (fleur de sel or Maldon flakes)
Instructions
- Cook the Green Beans: Top and tail the green beans and cook in simmering unsalted water for 5-10 minutes until al dente. Add a pinch of bicarbonate of soda to retain color and texture. Drain and cool.
- Prepare Shallot Mixture: Sauté shallot in olive oil until golden. Add almonds to toast, then toss in green beans. Remove from heat, add basil, salt, and pepper. Transfer to a dish.
- Finish and Serve: Top with sliced white peach and serve warm or cold.
