  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 3-4 tablespoons ice water
  • Turbinado sugar, for sprinkling crust
  • Almond milk, for brushing

Filling

  • 1/4 cup light brown sugar
  • 3 Honeycrisp apples* (peeled and sliced 1/2 inch)
  • 2 tablespoons all-purpose flour
  • 2 teaspoons lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon Country Crock® Plant Butter with Olive Oil, cut into small pieces

Peanut Butter Caramel

  • 1 cup dark brown sugar, packed
  • 3/4 cup full-fat coconut milk
  • 1/2 stick Country Crock® Plant Butter with Olive Oil
  • 1/2 cup peanut butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt

To Serve

  • Vegan vanilla ice cream
  • Plum or apricot preserves (optional)


Instructions

  1. Prepare the crust dough: In the bowl of a food processor, pulse together the flour, granulated sugar, and salt until evenly combined. Add cold, cubed plant butter and pulse until the mixture resembles coarse sand. Gradually add ice water one tablespoon at a time, pulsing until the dough becomes moist enough to form a ball, using about 3 tablespoons total.
  2. Chill the dough: Transfer the dough onto a floured surface, shape into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour to firm up.
  3. Make the peanut butter caramel: In a small pot over medium-low heat, combine dark brown sugar, coconut milk, and plant butter. Stir occasionally until bubbly and thickened, about 8-10 minutes. Remove from heat, stir in peanut butter, vanilla extract, and sea salt until smooth. Transfer to a glass jar and cool. Refrigerate and reheat before serving.
  4. Rest the dough: Remove the dough from the refrigerator, letting it sit for 10 minutes to soften slightly for rolling.
  5. Prepare the apple filling: Peel and slice apples into 1/2-inch pieces and place in a large bowl. Add light brown sugar, all-purpose flour, lemon juice, vanilla extract, cinnamon, salt, and nutmeg. Toss gently to coat all apple slices evenly.
  6. Roll out the dough: On a floured surface, roll the dough into a 12-inch diameter circle. Carefully transfer onto a parchment-lined baking sheet.
  7. Assemble the galette: Arrange the spiced apple slices on top of the dough, leaving a 1.5-inch border. Fold the edges inward over the apples, pleating as needed to enclose the filling partially. Dot remaining tablespoon of vegan butter evenly over the apples.
  8. Freeze before baking: Place the baking sheet with the assembled galette in the freezer for 15 minutes to firm the dough and butter pieces.
  9. Preheat oven and prepare crust: Preheat oven to 400°F. Brush the crust edges with almond milk and sprinkle generously with turbinado sugar for a crunchy, golden finish.
  10. Bake the galette: Bake in preheated oven for 40-45 minutes or until the crust is golden brown and the filling is bubbly.
  11. Optional glaze: Remove galette from oven and, while warm, lightly brush the apples with plum or apricot preserves to add shine and enhance presentation.
