Description

  • 6 heaping cups cubed watermelon
  • 1 English cucumber, cut in fourths, and sliced (about 2 cups)
  • 1/2 cup thinly sliced red onion
  • 3/4 cup crumbled feta cheese

Instructions

  1. Make the Dressing: In a large bowl, whisk together the olive oil, chopped fresh mint, balsamic vinegar, salt, and pepper until fully combined and fragrant.
  2. Toss the Salad: Add the cubed watermelon, sliced cucumber, and thinly sliced red onion to the bowl. Gently toss everything together to coat the fruit and vegetables evenly with the dressing.
