- 6 heaping cups cubed watermelon
- 1 English cucumber, cut in fourths, and sliced (about 2 cups)
- 1/2 cup thinly sliced red onion
- 3/4 cup crumbled feta cheese
Instructions
- Make the Dressing: In a large bowl, whisk together the olive oil, chopped fresh mint, balsamic vinegar, salt, and pepper until fully combined and fragrant.
- Toss the Salad: Add the cubed watermelon, sliced cucumber, and thinly sliced red onion to the bowl. Gently toss everything together to coat the fruit and vegetables evenly with the dressing.
- Add the Feta: Sprinkle the crumbled feta cheese over the top and gently toss again, being careful not to break up the watermelon cubes.
- Serve: Serve immediately, garnished with additional fresh mint if desired, for best texture and flavor.
